The Project
Fortnum & Mason is an upmarket department store located in the heart of London, established in 1707 by William Fortnum and Hugh Mason.
We were asked by the client to completely redesign the 6th Floor kitchen. As a result, we improved the ergonomics by changing a galley suite to a bespoke DeManincor island Cook Suite. This increased operational and energy efficiency, as did the induction technology used.
We also increased surface area within the kitchen, allowing for more preparation space. The project also included the installation of a cold room, pastry and larder to the kitchen.
Suspended gantries where proposed to keep views across the kitchen unrestricted. Improving the working environment for the kitchen staff.
We also created bespoke branded oak boxes and trolleys with plastic sealed liners to carry goods to the bars from the kitchen.
